A small gem in this unknown region of the Spanish interior landscape. A perfect location if you are visiting the Castle tours of the middle Age Castilla. Amazing restaurant and service with traditional and well curated dishes. Best ingredients and carefully treated kitchen. Special mention for the Mollejas de Lechazo al Ajillo, the Hojaldrito de Puerros and, of course both Cochinillo and Lechazo...cooked on a 100 hundred years old traditional oven. Very complete and hand made Dessert menu, comparable to the full menu of a conventional restaurant. Amazing Marrons soup and Achicoria Souffle...recovering the most traditional recipes of the region. A chapter aside is the very interesting Wine List with Malaparte wines on the menu. So, if you are a Natural Wine Lover this is a place to not miss. Definitively a place to go
